Tomato is cholesterol free and rich in vitamins A, C, beta-carotene and fibre. Tomato's red colour is due the presence of lycopene (antioxidant) which prevents cancer. Like the eggplant, red pepper, ground cherry, and potato, tomato is from the nightshade family.
